Fluffy French Toast

What you'll need:

  • 3 Vegan Croissants (Whole Foods make these fresh)

  • 2 cups Non - Dairy Milk

  • 1 TBSP Vanilla Extract

  • 1 cup Plant-Based EGG (Chickpea flour or Just EGG)

  • 1 TBSP Nutmeg

  • 1 TBSP Cinnamon

  • 2 TBSP Plant Based Butter

  • 1 cup strawberries

  • 1 TBSP Plant-based butter

  • 1 TBSP confections sugar

  • Non- Dairy Whipped Cream

    Here's how you make it:

    1- I start off with making my strawberry compote, in a small pan melt your plant-based butter. Blend strawberries and add to pan. Add confections sugar and allow this to come to a light simmer. Take off heat and proceed to completing recipe.

    2- In a bowl add all batter ingredients, hold butter as this will be used in a plan or griddle. Take baked croissant and dredge in batter. Remembering not to over soak as this will lead to a wet bread. You want a firm posture as depicted in the picture.

    3- Cook each side for 2-3 minutes on a low to medium heat until golden brown. I start off with 2 pieces of French toast on bottom and 1 on top. Add confectioners' sugar, sliced strawberries, fresh compote, and non-dairy whipped cream.
